Soft Boiled Eggs, Fried!

 

 

 

This is the type of breakfast you should make yourself on a day off. Or as a special "breakfast in bed" or "I want to impress you" small meal for people you love. It takes more time to throw together than the average breakfast, but believe me when I say it's worth it!

 

Ingredients:

  • Eggs
  • Flour
  • Bread Crumbs
  • 1 Beaten Egg
  • Vegetable Oil (at least 2 cups)
  • An optional suggestion is adding finely crumbled bacon bits to the bread crumbs!

The amount of ingredients depend on how may eggs you'll be making. I'd say two per person should suffice. You'll just need enough flour and bread crumbs to coat the eggs.

 

 

Directions:

 

  1. Boil eggs for 5 minutes. Remove, and place the eggs in a bowl of ice water until cool (about 10 minutes).
  2. Set up your flour, bread crumbs, and beaten egg in 3 seperate bowls.
  3. CAREFULLY remove egg shells (remember, the yolk inside isn't set, so you don't want to puncture the exterior of the egg!!) and start heating your vegetable oil in a medium sized pan.
  4. Dredge each egg in the flour, dip into the beaten egg, and coat with bread crumbs. Dip into the egg and coat in bread crumbs once more to make the outside layer thick.
  5. Place the eggs into the hot oil, two at a time, and rotate until all sides are golden brown. Don't leave them in longer than 30 seconds or the yolk will cook through.
  6. Serve warm and enjoy!
