Pina Colada Popsicles

 

 

 

I've never been a fan of popsicles. I've always found the best way to eat them is to suck all of the sugary juice out and throw away the ice that's left over. When it comes to Flavor Ice, I wait until the whole stick has melted and I drink it as juice. Something about watery gross ice is just way too boring.. That's why I came up with the idea to make my own popsicles with NO water, just flavor!

I really suggest you invest in your own popsicle mold. The options really are endless.. you can make pudding pops or watermelon pops or even chunky fruit pops where you don't have to puree everything- just chop the fruit up and add some juice.

We had our first really hot day last week and it inspired me to make these:

 

 

Pina Colada Popsicles

  • 1 Can pinapple chunks in juice
  • 1 Banana
  • 1 Can coconut milk
  • 1/2 tsp vanilla extract

 

Blend all ingredients, and pour into popsicle molds. Or, go old school and pour into plastic cups with popsicle sticks. Freeze, wait, and enjoy.
