Chicken Pillows

 

 
 
These are perfect little bundles of customizable deliciousness. You can pretty much fill these with whatever flavors you like. I’ve made a Mexican version (try using ground beef, salsa, spicy cheese, chilies, etc) and a few other varieties (try roasted veggies with cheese!), but I’m going to share with you the basic idea..
 
 

Chicken Pillows


Basic Ingredients:
 
  • 1 Can pillsbury crescent rolls
  • 2 Cups shredded chicken
  • ¼ C Sour cream
  • 3 Tablespoons cream cheese
  • 1 Large clove of pressed (or finely minced) garlic
  • Salt & Pepper

I usually also add:
  • ½ C Shredded cheddar cheese
  • ½ t Cayenne pepper


 

You’ll also need:
 

  • ¼ C melted butter
  • 2 C bread crumbs


Directions:
  1. Combine all ingredients (except for butter and bread crumbs), and stir until incorporated.
  2. Spread out and press the seams of the crescent dough together, using two triangles to form a square. It will make 4 squares all together. *Make sure the seams are pressed together, so the filling doesn’t come out later on!!*
  3. Place about ¼ C of filling in the center of each square, and fold the edges over, pressing them together to form a “pillow”.
  4. Dip each pillow in the melted butter, roll in bread crumbs, and place on a baking sheet.
  5. Bake for 20-25 minutes.

(OR, before rolling in bread crumbs, put in freezer safe ziplock bags and save for later!! When ready to bake, dip in butter & breadcrumbs, and bake!)
